What types of interrupts? Hardware, software, NMI?

Rerouting hardware interrupts (if it's possible) is primarily a function of the chipset, and would be covered by the applicable manuals for the chipset.

The other alternative would be to use the SMP features of the CPU for rerouting. (See the chapters on SMP for details, but it does get a bit complicated).
