I've been making a simple monotimbral MIDI synth. It has four waveforms and support for pitch bend.

Choose waveform with keys 1-4. Record to wav with the R key.

It's asynchronous, so there is some jitter, but not much latency.

If you have a MIDI loopback, you can play MIDI files to it. I have tested it with MIDI files converted from sids:
