Intel, mostly out of habit. When AMD was first with x86-64 AMD's optimization manual was the best at the time.

from what i saw, amd doc is better made than intel docs, but intel doc is needed if you have intel CPU.
amd doc is well made and clean in explanation of what instructions does.
intel docs are more accurate about the system structures and programming. if you combine both, you will have a very good knowledge of x86 architecture.

I generally use AMD manuals but I keep copies of both because they usually cover things the other doesn't. Also, I'm not a fan of the Intel styling, I find it a PITA to read.

If you are talking about the printed manuals, then I prefer the AMD manuals, the layout of the pages are cleaner and easier to read. Intel seems to discuss things more in depth though. Never seen the online versions or the pdf's
